Creamy Mushroom Soup

🍴 Ingredients (Serves 4)

  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1 lb mixed mushrooms (cremini, button, shiitake), sliced
  • 1 tsp fresh thyme (or ½ tsp dried)
  • Salt and pepper, to taste
  • 3 tbsp all-purpose flour
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • ½ cup whole milk
  • Optional: chopped parsley or truffle oil for garnish

🔥 Instructions

Sauté the Aromatics:
In a large soup pot, heat the butter and olive oil over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes. Stir in the garlic and cook for another 30 seconds.

Cook the Mushrooms:
Add the sliced mushrooms and thyme. Season with salt and pepper. Cook until the mushrooms release their moisture and turn golden brown, about 8–10 minutes.

Build the Base:
Sprinkle in the flour and stir continuously for 1–2 minutes to coat the mushrooms and remove the raw flour taste.

Add Broth and Simmer:
Slowly pour in the broth while stirring to prevent lumps. Bring to a gentle boil, then reduce the heat and simmer for 10–15 minutes, allowing the soup to thicken and flavors to develop.

Blend and Finish:
Use an immersion blender to partially or fully blend the soup to your preferred texture. Stir in the cream and milk, warming the soup through without boiling.

Serve and Garnish:
Ladle into bowls and top with a swirl of cream, chopped parsley, or a drizzle of truffle oil for an elevated touch.
