🍽 Ingredients (Serves 4)
  • 1 ½ cups Arborio rice (or any short-grain risotto rice)
  • 4 cups chicken or vegetable broth (preferably homemade)
  • 2 tbsp unsalted butter
  • 2 tbsp extra virgin olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup dry white wine (optional)
  • Zest and juice of 2 lemons
  • ½ cup grated Parmesan cheese, plus more for serving
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley or basil, for garnish (optional)

Prepare the Broth:
In a saucepan, keep the chicken or vegetable broth warm over low heat.

Sauté the Aromatics:
In a large pan or skillet, heat olive oil and butter over medium heat. Add chopped onion and garlic and sauté for 3–4 minutes, until softened and fragrant.

Cook the Rice:
Add the Arborio rice to the pan and cook for 1–2 minutes, stirring to coat each grain with oil and butter. If using wine, pour it in and let it absorb fully into the rice.

Add the Broth:
Begin adding the warm broth one ladleful at a time, stirring frequently. Wait for the liquid to absorb before adding more. Continue adding the broth and stirring for about 20–25 minutes, or until the rice is tender but still has a slight bite in the center.

Finish the Risotto:
Once the rice is cooked, stir in the lemon zest and juice, followed by the Parmesan cheese. Season with salt and pepper to taste. If the risotto is too thick, add a bit more broth to reach your desired consistency.

Serve:
Spoon the risotto into bowls, garnish with fresh parsley or basil, and top with extra Parmesan cheese.
