  • 1 baguette or Italian loaf, sliced
  • 4–5 ripe tomatoes (Roma or heirloom), finely diced
  • 2 cloves garlic, minced (plus 1 clove whole for rubbing)
  • ¼ cup extra virgin olive oil
  • 1 tbsp balsamic vinegar (optional)
  • Salt and freshly ground black pepper, to taste
  • Handful of fresh basil leaves, chopped or torn
  • Olive oil spray or brush for toasting

In a bowl, mix diced tomatoes with minced garlic, olive oil, balsamic vinegar (if using), salt, pepper, and basil. Let sit for 10–15 minutes to allow the flavors to meld.

Toast the Bread:
Lightly brush or spray bread slices with olive oil. Toast under a broiler or grill pan until golden and crisp. Immediately rub each slice with the whole garlic clove while the bread is still hot.

Assemble the Bruschetta:
