🥕 Ingredients (Serves 6)
  • 1 lb elbow macaroni or pasta of choice
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 2 cups whole milk, warmed
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded fontina cheese
  • ½ cup grated Parmigiano-Reggiano
  • 2 cloves garlic, minced
  • ½ tsp Italian seasoning
  • ¼ tsp crushed red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • ½ cup Italian-style breadcrumbs
  • 1 tbsp olive oil or melted butter (for topping)
  • Fresh parsley, for garnish

🍲 Instructions

Cook the Pasta: Bring a large pot of salted water to a boil. Cook pasta until just al dente. Drain and set aside.

Make the Roux: In a large saucepan, melt butter over medium heat. Stir in the flour and cook for 1–2 minutes until golden and bubbling.

Add Milk & Cheese: Gradually whisk in warm milk until smooth. Stir constantly until the sauce thickens. Lower heat and add mozzarella, fontina, and half the Parmigiano-Reggiano. Stir until melted and creamy.

Season: Add minced garlic, Italian seasoning, red pepper flakes (if using), salt, and black pepper to taste.

Combine Pasta and Sauce: Stir in the cooked pasta, coating evenly with the sauce. Transfer to a greased 9×13″ baking dish.

Make the Topping: In a small bowl, mix breadcrumbs with olive oil or melted butter and the remaining Parmesan.

Bake: Sprinkle breadcrumb mixture over pasta. Bake at 375°F (190°C) for 20–25 minutes, until bubbly and golden on top.

Serve: Let cool slightly before serving. Garnish with chopped parsley and a dusting of extra cheese if you’re feeling fancy.
