  • 6 large eggs
  • 2 medium zucchini, thinly sliced
  • ½ cup grated Parmigiano-Reggiano or Pecorino Romano
  • 1 small onion, finely chopped (optional)
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper
  • Fresh basil or parsley (optional, for garnish)

🍲 Instructions

Prep the Zucchini:
Heat olive oil in a nonstick skillet over medium heat. Add the zucchini (and onion if using) and sauté for about 7–10 minutes, or until tender and lightly golden. Season with salt and pepper.

Beat the Eggs:
In a mixing bowl, whisk together the eggs and cheese. Add a pinch of salt and pepper. Stir in the cooked zucchini mixture once slightly cooled.

Cook the Frittata:
Return the egg-zucchini mixture to the skillet. Cook over medium-low heat for about 5–6 minutes, until the bottom is set.
Optionally, place under the broiler for 2–3 minutes to set and lightly brown the top—or flip it carefully if you’re confident!
