Homemade V8 Juice
Ingredients (Servings: About 2 Quarts)
  • 6 large ripe tomatoes
  • 2 medium carrots
  • 2 celery stalks
  • 1 small cucumber
  • 1 small red bell pepper
  • 1 small beet (optional, for color & sweetness)
  • 2 cups water or vegetable broth
  • 1 handful fresh parsley
  • 1 handful fresh spinach or kale
  • 2 tablespoons lemon juice
  • 1 teaspoon sea salt (adjust to taste)
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika (optional)
  • A pinch of cayenne pepper (optional, for spice)

Instructions

1️⃣ Prep the vegetables:
Wash all produce thoroughly. Roughly chop tomatoes, carrots, celery, cucumber, bell pepper, beet, and greens.

2️⃣ Cook the base:
In a large pot, add the chopped vegetables and water (or broth). Bring to a boil over medium-high heat, then reduce to a simmer. Cook for 30–40 minutes, stirring occasionally.

3️⃣ Blend until smooth:
Carefully transfer the cooked mixture to a blender (in batches if needed). Blend on high until completely smooth.

4️⃣ Strain for a smoother juice:
For a silky texture, pour the blended mixture through a fine mesh sieve or cheesecloth into a large bowl or pitcher. Press with a spoon to extract as much liquid as possible.

5️⃣ Season and chill:
Stir in lemon juice, salt, pepper, paprika, and cayenne (if using). Taste and adjust seasoning. Refrigerate for at least 2 hours before serving for best flavor.

6️⃣ Serve and enjoy:
Pour into a glass over ice or use as a base for savory cocktails. Store in the fridge for up to 5 days.
