Tender cheese-stuffed tortellini are tossed with a medley of crisp-tender vegetables and a light, creamy garlic-parmesan sauce. It’s quick, comforting, and bursting with freshness — perfect for weeknights or a cozy weekend lunch.

  • 1 (20 oz) package refrigerated cheese tortellini
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 small zucchini, sliced
  • 1 small yellow squash, sliced
  • 1 cup broccoli florets
  • 1 cup cherry tomatoes, halved
  • ½ red bell pepper, thinly sliced
  • ½ cup frozen peas
  • ¾ cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 tablespoons butter
  • Salt and black pepper, to taste
  • Fresh basil or parsley, for garnish

👨‍🍳 Instructions

1️⃣ Cook the Tortellini:
🍝 Bring a pot of salted water to a boil. Cook tortellini according to package directions. Drain and set aside.

2️⃣ Sauté the Vegetables:
🥦 In a large skillet, heat olive oil over medium heat. Add garlic and cook for 30 seconds. Add zucchini, squash, broccoli, and bell pepper. Sauté for 4–5 minutes until tender-crisp.

3️⃣ Add Tomatoes and Peas:
🍅 Stir in cherry tomatoes and peas. Cook for another 2–3 minutes until warmed through and tomatoes begin to soften.

4️⃣ Make the Sauce:
🧄 Lower the heat and add butter, heavy cream, and Parmesan cheese to the skillet. Stir until the cheese is melted and sauce is smooth. Season with salt and pepper.

5️⃣ Combine and Serve:
🌿 Add the cooked tortellini to the skillet and gently toss to coat in the sauce. Garnish with fresh basil or parsley and extra Parmesan if desired.
