  • 2 tbsp olive oil

  • 2 tbsp unsalted butter
  • 1 garlic clove, minced
  • 1 cup heavy cream
  • 4 oz Gorgonzola cheese, crumbled
  • 1/4 cup grated Parmesan
  • Chopped parsley for garnish (optional)

🍳 Instructions:

1️⃣ Cook the Pasta:
🍝 Bring a large pot of salted water to a boil. Cook pasta until al dente according to package instructions. Reserve 1/2 cup pasta water, then drain and set aside.

🥩 Season the beef tenderloin medallions with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear the medallions for 2–3 minutes per side, depending on desired doneness. Remove and let rest, loosely covered.

3️⃣ Make the Gorgonzola Sauce:
🧄 In the same pan, reduce heat to medium. Add butter and garlic, sauté for 30 seconds. Stir in cream and bring to a gentle simmer. Add crumbled Gorgonzola and Parmesan, stirring until melted and smooth.

4️⃣ Combine:
🍶 Add the cooked pasta to the sauce, tossing to coat. Add reserved pasta water a little at a time if needed for desired consistency.

5️⃣ Slice and Serve:
