These delightful spinach lasagna rolls are an easy-to-serve twist on traditional lasagna. Creamy ricotta, savory spinach, and melty mozzarella are bundled into tender pasta sheets, topped with marinara, and baked to perfection.


Rolled & Ready: Spinach Lasagna Rolls with Ricotta & Marinara
🛒 Ingredients (Servings: 4–6)
  • 8–10 cooked lasagna noodles
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 10 oz fresh spinach (or frozen, thawed and squeezed dry)
  • 1½ cups ricotta cheese
  • 1 cup grated Parmesan cheese
  • 1 large egg
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 2 cups marinara sauce
  • 1½ cups shredded mozzarella cheese
  • Optional: red pepper flakes or fresh basil for garnish

🍳 Instructions:

1️⃣ Prep the Noodles:
🍝 Boil lasagna noodles in salted water until al dente. Drain and lay flat on a parchment-lined surface to cool.

2️⃣ Sauté the Spinach:
🥬 Heat olive oil in a skillet over medium heat. Add garlic and cook for 1 minute. Stir in spinach and sauté until wilted (or heated through if using frozen). Remove from heat and let cool slightly.

3️⃣ Make the Filling:
🧀 In a mixing bowl, combine ricotta, Parmesan, egg, salt, pepper, and the sautéed spinach. Mix until fully incorporated.

4️⃣ Assemble the Rolls:
🌀 Spread a spoonful of filling across each noodle. Roll tightly from one end to the other and place seam-side down in a greased baking dish.

🔥 Cover with foil and bake at 375°F (190°C) for 20 minutes. Remove foil and bake an additional 10 minutes, or until cheese is melted and bubbly.

7️⃣ Serve:
🌿 Garnish with basil or a pinch of red pepper flakes and serve warm.
