These crispy, savory veal skewers—known as Spiedini—are a Sicilian family favorite. Now with a delicious twist! Thin slices of veal are filled with herbed breadcrumbs and melty provolone, rolled, skewered with bay leaves, and grilled or baked to golden perfection. Serve with lemon wedges and a crisp salad.


Authentic Italian Veal Spiedini with Provolone & Bay Leaf Twist
🧄 Ingredients (Servings: 4)
  • 1 ½ lbs veal cutlets, thinly sliced and pounded flat
  • 1 cup Italian-style breadcrumbs
  • ¼ cup grated Pecorino Romano cheese
  • 2 tablespoons fresh parsley, finely chopped
  • 2 garlic cloves, minced
  • 1 tablespoon pine nuts (optional)
  • 2 tablespoons olive oil, plus more for brushing
  • 4 oz provolone cheese, cut into small strips
  • Fresh bay leaves (1 for each space between veal rolls on the skewer)
  • Salt and freshly ground black pepper, to taste
  • Lemon wedges, for serving
  • Bamboo or metal skewers (if using bamboo, soak in water for 30 minutes)

🍳 Instructions:

1️⃣ Make the Filling:
🥣 In a bowl, combine breadcrumbs, Pecorino Romano, parsley, garlic, pine nuts (if using), and olive oil. Mix until evenly moistened. Season with salt and pepper.

2️⃣ Assemble the Rolls:
🔪 Lay out veal cutlets on a flat surface. Spread a spoonful of the breadcrumb mixture on each piece. Add a strip of provolone cheese to the center, then roll tightly into a pinwheel.

3️⃣ Skewer the Spiedini:
🍢 Thread 3–4 veal rolls onto each skewer, inserting a bay leaf between each roll. Make sure the seam sides face the same direction for even cooking.

4️⃣ Grill or Bake:
🔥 Preheat a grill or oven to 400°F. Brush veal rolls with olive oil. Grill skewers over medium heat or bake on a parchment-lined sheet for 10–12 minutes, turning once until browned and cheese is melted inside.

5️⃣ Serve:
🍋 Transfer to a platter and serve hot with lemon wedges and your favorite Sicilian sides.
