This refreshing tropical spinach salad is bursting with flavor thanks to juicy pineapple, creamy avocado, sweet mango, and a zesty citrus-honey vinaigrette. It’s the perfect bright and healthy side dish for summer meals or island-inspired feasts.


Tropical Spinach Salad with Citrus-Honey Vinaigrette
🥗 Ingredients:
  • 🌿 5 cups baby spinach
  • 🥭 1 ripe mango, peeled and diced
  • 🍍 1 cup fresh pineapple chunks
  • 🥑 1 ripe avocado, diced
  • 🧅 ¼ cup thinly sliced red onion
  • 🥜 ¼ cup toasted macadamia nuts or sliced almonds (optional)

For the Citrus-Honey Vinaigrette:

  • 🍊 ¼ cup orange juice (fresh squeezed preferred)
  • 🍯 2 tablespoons honey
  • 🍋 1 tablespoon fresh lime juice
  • 🥄 1 teaspoon Dijon mustard
  • 🧂 Salt and pepper, to taste
  • 🫒 ⅓ cup extra-virgin olive oil
