This timeless roast lamb dish is infused with robust garlic, fragrant rosemary, and a hint of lemon. Slow-roasted to tender perfection, the lamb develops a beautifully crisp crust while staying juicy inside—simple, elegant, and deeply flavorful.


🍴 Ingredients
  • 1 bone-in leg of lamb (5–6 lbs)
  • 6 cloves garlic, sliced into slivers
  • 3 tablespoons fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme (optional)
  • 1 tablespoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • Zest of 1 lemon
  • 3 tablespoons olive oil
  • Juice of 1 lemon
  • 1 cup dry white wine (or low-sodium chicken broth)
  • Kitchen twine (if using a boneless leg)

Prep the Lamb:
If your leg of lamb is tied, untie it to season the inside. Use a sharp knife to make small slits all over the surface of the lamb. Insert garlic slivers into the slits for deep, aromatic flavor.

Make the Herb Rub:
In a bowl, mix chopped rosemary, thyme, lemon zest, salt, pepper, olive oil, and lemon juice. Rub this mixture generously all over the lamb, massaging it into the slits and coating all sides.

Marinate (Optional):
For maximum flavor, cover and refrigerate the lamb for at least 4 hours or overnight. Bring to room temperature 1 hour before roasting.

Roast the Lamb:
Preheat oven to 425°F (220°C). Place the lamb on a rack in a roasting pan. Pour the white wine into the bottom of the pan. Roast for 20 minutes, then reduce oven temperature to 350°F (175°C) and continue roasting for 1½ to 2 hours, or until internal temperature reaches:

  • 130°F for medium-rare
  • 140°F for medium

Rest and Serve:
Transfer lamb to a cutting board, tent loosely with foil, and let rest for 15–20 minutes. Carve into slices and serve with pan juices.
