For the Fritters:

  • 2 medium zucchini, grated
  • 1 teaspoon salt
  • 1 egg, beaten
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup crumbled feta (optional)
  • 1/4 cup chopped green onions or chives
  • 2 tablespoons chopped fresh dill or parsley
  • 1/3 cup all-purpose flour

  • 1 cup plain Greek yogurt
  • 1/2 cucumber, finely grated and squeezed dry
  • 1 garlic clove, minced
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh dill
  • Salt and pepper, to taste

Prep the Zucchini: Grate the zucchini and place it in a colander. Toss with salt and let sit for 10–15 minutes to draw out moisture. Then, squeeze out as much liquid as possible using a clean kitchen towel or cheesecloth.

Make the Fritter Batter: In a large bowl, combine the squeezed zucchini with egg, Parmesan, feta (if using), green onions, herbs, flour, and black pepper. Mix until well combined.

Cook the Fritters: Heat olive oil in a large skillet over medium heat. Drop spoonfuls of the batter into the skillet and flatten slightly. Cook for 3–4 minutes per side, or until golden and crispy. Drain on paper towels.

Make the Tzatziki: While fritters cook, whisk together the yogurt, grated cucumber, garlic, olive oil, lemon juice, dill, salt, and pepper. Chill until ready to serve.
