🥕 Ingredients (Serves 4)
  • 1½ lbs Italian sausage (sweet or spicy)
  • 2 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 large yellow onion, sliced
  • 3 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes (optional for saucy version)
  • ½ tsp dried oregano
  • ¼ tsp crushed red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • Fresh basil or parsley, for garnish
  • Hoagie rolls, pasta, or polenta (optional, for serving)

🍲 Instructions

Brown the Sausages: Heat 1 tablespoon olive oil in a large skillet over medium heat. Add sausages and cook until browned on all sides, about 7–8 minutes. Transfer to a plate (they don’t need to be fully cooked yet).

Sauté the Vegetables: In the same skillet, add remaining olive oil. Add the peppers and onions. Cook over medium heat until softened and slightly caramelized, about 10–12 minutes. Add garlic and sauté 1–2 minutes more.

Deglaze and Simmer: Add the diced tomatoes (if using), oregano, red pepper flakes, and season with salt and pepper. Stir to combine.

Finish the Sausages: Return the browned sausages to the skillet. Cover and simmer over low heat for 15–20 minutes, until sausages are fully cooked through and everything is infused with flavor.

Serve: Spoon sausages with peppers and onions over cooked pasta, creamy polenta, or pile into warm hoagie rolls. Garnish with chopped basil or parsley and enjoy!
