This timeless comfort dish features tender strips of beef simmered in a rich, creamy mushroom sauce. Served over egg noodles or mashed potatoes, Beef Stroganoff is hearty, elegant, and easy enough for weeknights but impressive enough for guests.


Beef Stroganoff

🍴 Ingredients (Serves 4)

  • 1 lb beef sirloin or tenderloin, cut into thin strips
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons all-purpose flour
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz cremini or white mushrooms, sliced
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • ½ cup sour cream
  • Chopped parsley, for garnish
  • Cooked egg noodles, mashed potatoes, or rice, for serving

Prep and Season the Beef:
Season the beef strips with salt and pepper, then lightly toss with flour to coat. This helps with browning and thickens the sauce later.

Sear the Beef:
Heat olive oil in a large skillet over medium-high heat. In batches, sear the beef just until browned on all sides, about 1–2 minutes per batch. Remove and set aside.

Sauté the Veggies:
Reduce heat to medium and add butter to the skillet. Sauté onions until soft, about 3 minutes. Add mushrooms and cook until they release their moisture and begin to brown. Stir in the garlic and cook for 30 seconds.

Deglaze and Simmer:
Pour in the beef broth, Worcestershire sauce, and Dijon mustard. Stir well, scraping up any browned bits from the bottom of the pan. Bring to a simmer and cook for 5–7 minutes until slightly reduced.

Make it Creamy:
Reduce heat to low and stir in the sour cream until smooth. Return the beef to the skillet and simmer gently for 2–3 minutes, just to reheat. Do not boil or the sour cream may curdle.

Serve and Enjoy:
Spoon the Stroganoff over egg noodles, mashed potatoes, or rice. Garnish with chopped parsley and serve hot.
