Perfectly Juicy Prime Rib Roast: The Reverse Sear Method

When it comes to serving an out-of-this-world prime rib roast, there is no alternative to the reverse sear method. This technique guarantees a perfectly cooked, tender, and juicy prime rib with a scrumptious, caramelized crust. In contrast to normal roasting, reverse searing has the meat cooked slowly at low heat and then seared at high heat for that heavenly caramelization. Let’s start the recipe!

Ingredients:
  • 1 (5–7 lb) bone-in prime rib roast
  • 2 tbsp kosher salt
  • 1 tbsp black pepper
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 2 tbsp minced fresh rosemary
  • 2 tbsp minced fresh thyme
  • 2 tbsp Dijon mustard (optional, for flavoring the crust)
  • 2 tbsp olive oil or melted butter
  • 4 cloves minced garlic

Instructions:
1. Prep the Prime Rib
  • Take the prime rib out of the refrigerator at least 2 hours in advance to allow it to come up to room temperature.
  • Pat the roast with paper towels to dry it.
  • Mix the black pepper, salt, onion powder, garlic powder, thyme, rosemary, and garlic together in a bowl.
  • Brush the prime rib with olive oil or melted butter and cover it completely with the seasoning mixture evenly.
2. Slow Roast (The Reverse Sear Method)
  • Preheat your oven to 225°F (107°C).
  • Place the roast on a wire rack over a baking sheet.
  • Place a meat thermometer in the center of the thickest part of the roast.
  • Roast slowly until the internal temperature reaches 120°F (49°C) for rare130°F (54°C) for medium-rare, or 140°F (60°C) for medium (this takes approximately 3–4 hours, depending on the size of the roast).
3. Rest the Roast
  • Remove the roast from the oven and tent it loosely with foil.
  • Let it rest for 30–45 minutes — this helps the juices redistribute and prevents drying out.
4. Sear for the Perfect Crust
  • Increase oven temperature to 500°F (260°C) or use a cast-iron skillet on high heat.
  • Sear the roast for 5–10 minutes, rotating to develop an even crust.
  • Remove from heat and slice into thick, juicy portions.
5. Serve and Enjoy
  • Serve with horseradish sauce, au jus, or your favorite sides like mashed potatoes and roasted vegetables.
