Colorful bell peppers are filled with a hearty mixture of seasoned ground beef, rice, and melty cheese—then baked to perfection. This comforting classic is easy to customize and perfect for prepping ahead of time.
🍴 Ingredients
- 4 large bell peppers (any color), tops cut off and seeds removed
- 1 lb ground beef
- 1 cup cooked white rice
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 (15 oz) can diced tomatoes, drained
- 1 cup shredded mozzarella or cheddar cheese
- 2 tbsp tomato paste
- 1 tsp dried oregano
- ½ tsp paprika
- Salt and pepper, to taste
- Olive oil
🔥 Instructions
Prep the Peppers:
Preheat oven to 375°F (190°C). Lightly brush the peppers with olive oil, place them upright in a baking dish, and bake for 10–12 minutes to slightly soften.
Cook the Filling:
In a large skillet over medium heat, sauté chopped onion in olive oil until translucent. Add garlic and cook another 30 seconds. Stir in ground beef and cook until browned, breaking it up as it cooks.
Add Rice and Seasonings:
Stir in cooked rice, tomato paste, diced tomatoes, oregano, paprika, salt, and pepper. Cook for 2–3 more minutes until everything is well combined and heated through. Remove from heat and stir in half of the cheese.

Stuff and Bake:
Spoon the filling into the partially baked peppers, packing it down slightly. Top with the remaining cheese.
Final Bake:
Bake uncovered for 15–20 minutes, or until the cheese is melted and bubbly and the peppers are tender.
