East meets West in this fun twist on the classic Vietnamese sandwich. These tacos are filled with savory marinated pork, tangy pickled veggies, and a spicy sriracha mayo—served in a soft tortilla for the perfect hand-held bite.


Pork Banh Mi Tacos
🍴 Ingredients

For the Pork:

  • 1 lb pork shoulder or pork tenderloin, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 tablespoon vegetable oil

For the Pickled Veggies:

  • 1 cup julienned carrots
  • 1 cup julienned daikon radish (or sub cucumber)
  • ½ cup rice vinegar
  • 1 tablespoon sugar
  • ½ teaspoon salt

For the Sriracha Mayo:

  • ½ cup mayonnaise
  • 1–2 tablespoons sriracha (to taste)
  • 1 teaspoon lime juice

Other:

  • 8 small flour or corn tortillas
  • Fresh cilantro leaves
  • Sliced jalapeños (optional)
  • Lime wedges

🔥 Instructions

Pickle the Veggies:
In a bowl, whisk together rice vinegar, sugar, and salt. Add carrots and daikon, toss to coat, and set aside to pickle for at least 20 minutes.

Marinate the Pork:
In a separate bowl, mix soy sauce, fish sauce, brown sugar, lime juice, garlic, and ginger. Add the pork, toss to coat, and marinate for 15–30 minutes.

Cook the Pork:
Heat vegetable oil in a skillet over medium-high heat. Add the marinated pork and cook until caramelized and cooked through, about 5–7 minutes.

Make the Sriracha Mayo:
In a small bowl, mix mayo, sriracha, and lime juice until smooth.

Pork Banh Mi Tacos

Assemble the Tacos:
Warm the tortillas, then top each with pork, a small pile of pickled veggies, a drizzle of sriracha mayo, fresh cilantro, and jalapeños if using.

Serve and Enjoy:
Serve immediately with lime wedges for squeezing.
