🌿 Ingredients (Serves 4)
  • 1 rack of lamb (8 ribs, Frenched)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme, finely chopped
  • 1 tablespoon Dijon mustard
  • Salt and freshly ground black pepper, to taste
  • 1 cup breadcrumbs (preferably fresh)
  • ½ cup grated Parmesan cheese

Prepare the Lamb: Preheat your oven to 400°F (200°C). Pat the rack of lamb dry with paper towels and season generously with salt and pepper.

Make the Herb Crust: In a small bowl, combine garlic, rosemary, thyme, and Dijon mustard. Stir in olive oil until the mixture forms a paste.

Sear the Lamb: Heat a skillet over medium-high heat. Add a bit of olive oil and sear the lamb, fat-side down, for 2–3 minutes until browned. Flip the lamb and sear the other side for another 1–2 minutes.

Apply the Herb Paste: Remove the lamb from the skillet and let it cool slightly. Brush the herb paste evenly over the exposed side of the rack.

Make the Breadcrumb Topping: In a small bowl, mix the breadcrumbs with Parmesan cheese. Press this mixture firmly into the mustard-coated lamb to form a crust.

Roast the Lamb: Place the lamb in a roasting pan and roast for 18–20 minutes for medium-rare, or until a thermometer inserted into the center reads 125°F (52°C). For medium, roast for 22–25 minutes until the temperature reaches 135°F (57°C).

Rest and Serve: Remove the lamb from the oven and let it rest for 10 minutes before slicing between the ribs. Serve immediately with your favorite sides.
