This Boneless Chicken Paprikash is a rich and comforting Hungarian stew made with tender chicken, sweet Hungarian paprika, onions, and a velvety sour cream sauce.   • 1½ lbs boneless, skinless chicken thighs or breasts, cut into chunks
  • 1 tablespoon vegetable oil or butter
  • 1 large onion, finely chopped
  • 1 red bell pepper, finely chopped
  • 2 garlic cloves, minced
  • 1 tablespoon sweet Hungarian paprika (or more to taste)
  • 1 teaspoon smoked paprika (optional, for depth)
  • 1 tablespoon all-purpose flour
  • 1 cup chicken broth
  • ½ cup sour cream
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Cooked egg noodles or spaetzle, for serving

1️⃣ Sear the Chicken:
🔥 In a large skillet or Dutch oven, heat oil over medium-high heat. Season chicken with salt and pepper. Brown chicken on all sides (about 5–6 minutes). Remove and set aside.

2️⃣ Sauté the Aromatics:
🧅 Add chopped onion and bell pepper to the same pan and cook until soft and golden, about 5–7 minutes. Add garlic and cook for 1 minute more.

🌶 Stir in sweet paprika and optional smoked paprika. Sprinkle in flour and cook for 1 minute to remove raw taste, stirring constantly.

🍲 Gradually stir in chicken broth, scraping up browned bits. Return chicken to pan. Bring to a simmer, cover, and cook for 20–25 minutes, or until chicken is tender and sauce thickens.

5️⃣ Finish with Sour Cream:
🥣 Reduce heat to low. Stir in sour cream and heat gently (don’t boil). Adjust seasoning with salt and pepper if needed.

6️⃣ Serve and Garnish:
🍽 Spoon chicken and sauce over noodles. Garnish with chopped parsley.
