This Baked Balsamic Chicken is tangy, juicy, and packed with flavor thanks to a rich marinade of balsamic vinegar, garlic, and herbs. A simple yet elegant weeknight dinner that pairs beautifully with roasted vegetables or fluffy mashed potatoes.

🛒 Ingredients (Servings: 4)
  • 4 boneless, skinless chicken breasts
  • 1/4 cup balsamic vinegar
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tbsp Dijon mustard
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp freshly ground black pepper

🍳 Instructions:

1️⃣ Prepare the Marinade:
🥄 In a medium bowl, whisk together balsamic vinegar, olive oil, garlic, Dijon mustard, rosemary, thyme, salt, and pepper.

2️⃣ Marinate the Chicken:
🕒 Place the chicken in a resealable bag or shallow dish and pour the marinade over it. Seal and refrigerate for at least 1 hour or overnight for deeper flavor.

🔥 Preheat your oven to 400°F (200°C). Lightly grease a baking dish.

4️⃣ Bake the Chicken:
🍗 Arrange the chicken breasts in the dish and spoon a bit of the marinade over the top. Bake uncovered for 25–30 minutes, or until the internal temperature reaches 165°F (74°C).

5️⃣ Rest and Serve:
🛑 Let the chicken rest for 5 minutes before slicing. Spoon the remaining pan juices over the chicken before serving.
