  • 2 cups chicken broth
  • 1 small onion, chopped
  • 3 cloves garlic
  • 1 tsp cumin
  • ½ tsp oregano
  • Salt to taste

For the Enchiladas:

  • 2 cups cooked, shredded chicken
  • 8 corn tortillas
  • 1 ½ cups shredded Monterey Jack or Mexican cheese blend
  • 2 tablespoons vegetable oil
  • Fresh cilantro, for garnish
  • Sour cream and lime wedges, for serving (optional)

🍳 Instructions:

1️⃣ Make the Sauce:
🌶️ Toast the dried chiles in a dry skillet for 1–2 minutes until fragrant. Add to a saucepan with broth, onion, garlic, cumin, oregano, and a pinch of salt. Simmer for 10 minutes, then blend until smooth.

2️⃣ Prep the Filling:
🍗 In a bowl, combine shredded chicken with ½ cup of the red chile sauce and a handful of shredded cheese. Mix well.

3️⃣ Soften the Tortillas:
🔥 Lightly fry each tortilla in a bit of oil for about 10 seconds per side. Drain on paper towels to prevent sogginess.

4️⃣ Assemble the Enchiladas:
🫓 Spoon filling onto each tortilla, roll tightly, and place seam-side down in a greased baking dish.
