🥩 Ingredients:
  • 🥩 2 filet mignon steaks (about 1½ inches thick)
  • 🧂 Kosher salt and freshly ground black pepper
  • 🧈 2 tablespoons unsalted butter
  • 🌿 1 tablespoon olive oil
  • 🧄 2 garlic cloves, smashed
  • 🌿 2 sprigs fresh thyme or rosemary

🔥 Heat a cast-iron skillet over medium-high heat. Add olive oil and butter. When hot and shimmering, add garlic cloves and herbs, then place steaks in the pan. Sear for 3–4 minutes per side for medium-rare, basting with the butter.

🧅 In the same skillet, lower heat to medium. Add chopped shallots and sauté until soft, about 1 minute. Deglaze the pan with white wine or brandy, scraping up browned bits. Simmer until reduced by half.

5️⃣ Finish the Sauce:
🥄 Stir in Dijon mustard and heavy cream. Simmer until thickened slightly, about 2–3 minutes. Season with salt and pepper to taste.

6️⃣ Serve:
