Zesty Skirt Steak with Spicy Pineapple Relish

🍽️ Ingredients (Servings: 4)

For the Skirt Steak:

  • 1½ pounds skirt steak
  • 1/4 cup soy sauce
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 3 garlic cloves, minced
  • 1 teaspoon chili flakes
  • Salt and freshly cracked black pepper, to taste

For the Spicy Pineapple Relish:

  • 1½ cups fresh pineapple, finely diced
  • 1/2 cup red bell pepper, diced
  • 1 jalapeño, minced (seeds removed for less heat)
  • 2 tablespoons red onion, finely chopped
  • 2 tablespoons fresh cilantro, chopped
  • 1 tablespoon lime juice
  • 1 teaspoon honey
  • Salt, to taste

🍳 Instructions:

1️⃣ Marinate the Steak:
🥣 In a bowl, whisk together soy sauce, olive oil, lime juice, garlic, chili flakes, salt, and pepper. Place the skirt steak in a zip-top bag or shallow dish and pour the marinade over. Let it marinate for at least 1 hour, preferably overnight.

2️⃣ Make the Pineapple Relish:
🍍 In a medium bowl, combine diced pineapple, red bell pepper, jalapeño, red onion, cilantro, lime juice, honey, and a pinch of salt. Toss well and refrigerate for at least 30 minutes to let the flavors meld.
