🧂 Ingredients
  • 2 large boneless, skinless chicken breasts
  • 4 slices deli ham
  • 4 slices Swiss cheese
  • Salt and pepper, to taste
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs (Italian seasoned or panko for extra crunch)
  • 1 tbsp Dijon mustard (optional)
  • 2 tbsp olive oil or melted butter (for baking)

Prep the Chicken: Slice each chicken breast horizontally to butterfly it, then place between two sheets of plastic wrap and gently pound to about 1/4-inch thickness.

Layer the Fillings: Season the chicken with salt and pepper. Place 2 slices of ham and 2 slices of Swiss cheese on each breast. If desired, lightly spread Dijon mustard on the inside before adding ham and cheese.

Roll and Secure: Roll up each chicken breast tightly like a jelly roll, tucking in the sides as you go. Secure with toothpicks if needed.

Bread the Chicken: Dredge each rolled chicken breast in flour, dip into beaten eggs, then coat with breadcrumbs, pressing lightly to adhere.

Bake or Pan-Fry:
To Bake: Place on a greased baking sheet. Drizzle with olive oil or melted butter. Bake at 375°F (190°C) for 25–30 minutes, until golden brown and cooked through.
To Pan-Fry: Heat oil in a skillet over medium heat. Cook for about 4–5 minutes per side until golden and fully cooked inside.

Rest and Serve: Let rest 5 minutes, then slice and serve with a drizzle of creamy Dijon sauce, if desired.
