🌿 Ingredients (Serves 2–3)

For the Crab Stuffing:

  • 6 oz lump crab meat, picked over for shells
  • ¼ cup breadcrumbs (Italian-style or panko)
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh parsley, chopped
  • 1 green onion, finely chopped
  • Salt and black pepper, to taste
  • Juice of ½ lemon

For the Sole:

  • 4 sole fillets (about 4–6 oz each)
  • Salt and pepper, to season
  • 1 tablespoon olive oil or melted butter
  • Paprika, for dusting (optional)

For the Lemon Butter Sauce:

  • 4 tablespoons unsalted butter
  • Juice of 1 lemon
  • 1 clove garlic, minced
  • 1 tablespoon white wine or seafood stock
  • Salt, to taste

Prepare the Filling: In a mixing bowl, combine crab meat, breadcrumbs, mayo, mustard, parsley, green onion, lemon juice, salt, and pepper. Gently fold until well mixed—being careful not to break up the crab too much.

Preheat and Season: Preheat oven to 375°F (190°C). Lightly butter a baking dish or coat it with olive oil. Pat the sole fillets dry and season both sides with salt and pepper.

Stuff and Roll: Place a spoonful of crab mixture at the wider end of each fillet, then gently roll the fillet around the stuffing. Place each roll seam-side down in the baking dish. Brush the tops with melted butter or olive oil, and sprinkle lightly with paprika if using.

Bake the Fish: Cover loosely with foil and bake for 15–18 minutes, until the fish flakes easily with a fork.

Make the Lemon Butter Sauce: While the fish bakes, melt butter in a small saucepan over medium heat. Add garlic and cook until fragrant (about 30 seconds). Stir in lemon juice and wine or stock. Simmer for 2–3 minutes, then season to taste.

Serve and Enjoy: Plate the sole rolls and drizzle with warm lemon butter sauce. Garnish with extra parsley or lemon zest, if desired. Serve with a crisp salad or buttery rice pilaf.
