  • 2 cloves garlic, minced
  • ½ cup dry white wine (optional, but adds depth)
  • 6 cups beef stock (use high-quality or homemade if possible)
  • 1 tablespoon Worcestershire sauce (optional)
  • 1 bay leaf
  • 1 teaspoon fresh thyme (or ½ tsp dried thyme)
  • 4 slices crusty baguette or country bread, toasted
  • 1 ½ cups shredded Gruyère cheese (or Swiss cheese)

Caramelize the Onions: In a large pot or Dutch oven, melt butter with olive oil over medium heat. Add sliced onions, sugar, and salt. Cook slowly, stirring often, for 30–40 minutes until deeply golden and caramelized.

Add Garlic and Wine: Stir in the garlic and cook for 1 more minute. Add the white wine and let it simmer for 2–3 minutes to reduce slightly.

Simmer the Broth: Add the beef stock, Worcestershire sauce, bay leaf, and thyme. Bring to a simmer and let cook uncovered for 20–25 minutes to deepen the flavors. Remove bay leaf before serving.

Toast and Top: Preheat your broiler. Ladle soup into oven-safe bowls. Place a slice of toasted bread on top of each bowl, and generously cover with shredded Gruyère.

Broil and Serve: Place bowls on a baking sheet and broil for 2–4 minutes, until the cheese is melted and golden brown. Serve hot and bubbling.
