  • 1 cup Heavy Cream
  • 4 large Egg Yolks

Create the Custard Base: In a medium saucepan, heat the milk and cream over medium heat until it begins to steam, but not boil. In a separate bowl, whisk the egg yolks and sugar together until pale and thick.

Temper the Eggs: Slowly pour the warm milk mixture into the yolk mixture while whisking constantly to avoid scrambling the eggs.

Thicken the Base: Return the combined mixture to the saucepan. Cook over low heat, stirring constantly with a wooden spoon, until it thickens enough to coat the back of the spoon (about 170–175°F).

Flavor and Cool: Remove from heat and stir in the vanilla extract or other flavorings. Let the mixture cool slightly, then cover and chill in the refrigerator for at least 4 hours or overnight for best results.

Churn It: Pour the chilled custard into your ice cream maker and churn according to the manufacturer’s instructions, usually around 20–30 minutes.
