  • 2 pounds thick-cut bacon (1 pound for weaving, 1 pound for filling)

Lay out a sheet of parchment paper or foil on a flat surface. Create a square bacon weave (6 x 6 or larger) by laying half the bacon strips vertically and weaving the rest horizontally. It should look like a bacon lattice or basket weave.

2. Spread the Sausage

Evenly spread the sausage over the entire bacon weave. Leave about 1/2 inch from the edge so you can seal it later.

3. Add the Filling

Cook the remaining pound of bacon and crumble it over the sausage layer. Optional: sprinkle with cheese for extra melt-in-your-mouth goodness. Drizzle with a bit of BBQ sauce and sprinkle some BBQ rub on top.

4. Roll It Up

5. Season & Cook

Sprinkle the outside with BBQ rub. You can either smoke it at 225°F for about 2.5 to 3 hours until internal temp hits 165°F, or bake it in the oven at 350°F for 1 to 1.5 hours. During the last 15 minutes, brush with BBQ sauce to glaze.

6. Rest & Slice

Let it rest for 10 minutes before slicing into it. Serve with extra BBQ sauce on the side if desired.
