These Korean-style short ribs (also known as galbi) are marinated in a bold, sweet-savory blend of soy, garlic, sesame, and pear for maximum flavor and tenderness. Quick to grill and packed with umami, they’re perfect for backyard BBQs or casual weeknight dinners.

Grilled Korean-Style Short Ribs

🍴 Ingredients (Serves 4)

  • 3 lbs flanken-cut beef short ribs
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • 2 tbsp honey
  • 1 Asian pear or Bosc pear, grated
  • 4 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 2 tbsp sesame oil
  • 1/4 cup rice vinegar
  • 1/2 tsp freshly ground black pepper
  • 2 scallions, chopped (for garnish)
  • 1 tbsp toasted sesame seeds (for garnish)

🔥 Instructions

Make the Marinade:
In a bowl, whisk together soy sauce, brown sugar, honey, grated pear, garlic, ginger, sesame oil, vinegar, and black pepper until sugar is dissolved and mixture is well combined.

Marinate the Ribs:
Place the short ribs in a large resealable bag or shallow dish. Pour the marinade over the ribs and massage to coat. Cover and refrigerate for at least 6 hours or overnight for best results.

Heat the Grill:
Preheat your grill to medium-high. Remove ribs from marinade, letting excess drip off. Discard remaining marinade.

Grill to Perfection:
Grill the ribs for 3–4 minutes per side, or until charred and caramelized but still juicy inside. The thin cut cooks quickly, so keep an eye on them.

Serve It Up:
Transfer to a platter, sprinkle with scallions and sesame seeds, and serve immediately with steamed rice, kimchi, or your favorite sides.

💡 Helpful Tip: If you can’t find flanken-style ribs, ask your butcher to slice beef short ribs thinly across the bone—about 1/4 inch thick. The sweetness from the pear helps tenderize the meat beautifully!
