  • 12 oz penne pasta

  • 1 (28 oz) can whole peeled San Marzano tomatoes, crushed by hand or blended
  • Salt, to taste
  • Fresh parsley or basil, chopped (for garnish)
  • Freshly grated Parmesan cheese (optional, but highly encouraged)

Boil the pasta
Bring a large pot of salted water to a boil. Add the penne and cook according to package instructions until al dente. Reserve about ½ cup of the pasta water before draining.

Infuse the oil
While the pasta cooks, heat olive oil in a large skillet over medium heat. Add sliced garlic and red pepper flakes. Sauté for about 1–2 minutes, just until the garlic is fragrant and golden — don’t let it burn.

Simmer the sauce
