For the Pickled Shrimp:

  • ½ lb cooked small shrimp (peeled & deveined)
  • ¼ cup red onion, thinly sliced
  • 1 garlic clove, smashed
  • ½ cup white wine vinegar
  • ¼ cup olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon sugar
  • ½ teaspoon celery seed
  • ½ teaspoon crushed red pepper flakes
  • Salt and black pepper to taste

For the Deviled Eggs:

  • 6 large eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • ½ teaspoon white vinegar
  • Salt and pepper to taste
  • Paprika and fresh dill, for garnish

Pickle the Shrimp:
In a bowl or mason jar, combine cooked shrimp, red onion, garlic, vinegar, oil, lemon juice, sugar, celery seed, and red pepper flakes. Season with salt and pepper. Refrigerate for at least 2 hours (or overnight) to let the flavors infuse.

Boil and Peel the Eggs:
Place eggs in a pot, cover with cold water, and bring to a boil. Once boiling, cover, remove from heat, and let sit for 10–12 minutes. Transfer eggs to an ice bath, then peel.

Make the Filling:
Slice the eggs in half lengthwise and remove the yolks. In a bowl, mash yolks with mayonnaise, Dijon, vinegar, salt, and pepper until smooth.
