  • 1 bay leaf

  • 1 small onion, finely chopped
  • 4 oz bacon or pancetta, chopped
  • 8 oz mushrooms, sliced
  • 2 tablespoons unsalted butter
  • 1 tablespoon all-purpose flour

  • Toasted baguette slices or mashed potatoes, for serving

In a large skillet or saucepan, cook the chopped bacon or pancetta over medium heat until crisp. Remove and set aside, leaving the fat in the pan.

Build the Sauce:
Add butter to the pan, then sauté onion and garlic until softened. Stir in mushrooms and cook until browned. Sprinkle flour over the mixture and cook for 1 minute. Stir in tomato paste, then add the red wine, stock, bay leaf, and thyme. Bring to a simmer and cook until reduced and thickened, about 15–20 minutes. Season with salt and pepper. Remove herbs.
