Sour Cream Pound Cake

  • 1 cup (2 sticks) unsalted butter, softened
  • 3 cups granulated sugar
  • 6 large eggs
  • 3 cups all-purpose flour
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup sour cream
  • 1 tsp pure vanilla extract
  • Optional: 1 tsp almond extract or lemon zest for added flavor

Preheat the Oven:
Preheat your oven to 325°F (163°C). Grease and flour a 10-inch bundt or tube pan, making sure to get every crevice.

Cream the Butter and Sugar:
In a large mixing bowl, beat the softened butter and sugar together until light and fluffy, about 3–5 minutes.

Add Eggs One at a Time:
Beat in the eggs one at a time, making sure each egg is fully incorporated before adding the next.

Mix the Dry Ingredients:
In a separate bowl, whisk together the flour, baking soda, and salt.

Combine with Sour Cream:
Add the flour mixture to the batter in three additions, alternating with the sour cream. Begin and end with the dry ingredients. Stir in the vanilla extract (and almond or lemon zest if using).

Pour and Smooth:
Pour the thick batter into the prepared pan and smooth the top with a spatula.

Bake to Perfection:
Bake for 1 hour to 1 hour 20 minutes, or until a toothpick inserted into the center comes out clean.

Cool and Enjoy:
Let the cake cool in the pan for 15 minutes, then turn out onto a wire rack to cool completely before slicing.
