In a food processor, pulse flour, sugar, and salt. Add butter and pulse until crumbly. Add egg yolk and just enough ice water to bring dough together. Shape into a disk, wrap, and chill 30–45 minutes. Roll out and press into a 9-inch tart pan. Prick with a fork and freeze 10 minutes. Bake at 375°F (190°C) for 20–25 minutes or until golden. Cool completely.
Prepare the Amaretto Crème:
Heat milk in a saucepan until steaming. In a bowl, whisk yolks, sugar, and cornstarch. Slowly pour in hot milk, whisking constantly. Return to heat and cook, whisking until thickened, about 2–3 minutes. Remove from heat; stir in vanilla, amaretto, and butter. Strain if needed. Chill with plastic wrap touching the surface.

Assemble the Tart:
