  • 2 lbs ripe tomatoes, cored and chopped

  • ¼ cup extra virgin olive oil
  • Salt and pepper, to taste

Prepare the Veggies:
Roughly chop all your vegetables and place them in a blender or food processor. If using bread, soak it in water for a few seconds, then squeeze out excess liquid and add to the mix.

Blend Until Smooth:
Process until smooth. For an ultra-silky texture, strain the mixture through a fine mesh sieve into a large bowl, pressing with a spoon to extract all the liquid.

Season and Chill:
Stir in the red wine vinegar and olive oil. Season with salt and pepper to taste. Cover and chill in the refrigerator for at least 2 hours to let the flavors meld.

Serve Cold:
Ladle the chilled soup into bowls or glasses. Garnish with your favorite toppings for a pop of color and texture.
